This cheesy casserole recipe is so darn good it gives other side dishes a bad name! Made with everyday ingredients, it's ready for the oven in just 10 minutes.
And while this recipe tastes great as is, you can always dress it up by adding a variety of bell peppers, green chiles, fresh poblano peppers, or even jalapeño peppers!

Fiesta Corn Casserole Recipe Instructions
Making this tasty Fiesta Corn Casserole is incredibly quick and easy. It takes about 10 minutes to prep, then your oven does the rest. In about 35 minutes you'll have a side dish that's full of cheesy goodness!
To get started, you simply combine all of the ingredients except the shredded cheese into a large skillet and cook over medium heat until the corn is cooked through and cream cheese is melted. You then stir in one cup of shredded cheese and pour the whole thing into a baking dish. Top with the remaining cheese, and bake until it's ready.
Once it's done, all that's left is to serve and enjoy!

Can I Make this Fiesta Corn Casserole Recipe Lighter?
To make a lighter version of this recipe you could try using light cream cheese instead of regular, and perhaps cut down on the amount of shredded cheese used as well. However, I have never tried it, and it may impact the flavor of the dish. I'd love to know if you do try it though, and how it turns out! Leave me a comment below.
Can I Use Canned Corn Instead of Frozen?
I don't see any reason why you couldn't use canned corn, as long as you use the same amount and drain it first. It may also alter the taste just a bit. I personally prefer the taste of frozen corn over canned corn though. I bet using fresh corn would taste amazing!

Fiesta Corn Casserole
- 2 12 oz packs Frozen corn
- 1 8 oz Cream cheese cubed
- 2 cups Cheddar Jack Cheese (shredded) divided
- 1 Red Bell Pepper diced
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Paprika
- 2 tbsps Butter
- Preheat the oven to 350 degrees and prepare a 2-quart casserole dish by greasing with nonstick cooking spray.
- Add frozen corn, bell pepper, salt, pepper, paprika, butter, and cream cheese to a large skillet. Cook over medium heat until corn is cooked through and cream cheese is melted.
- Remove skillet from heat and stir in 1 cup of shredded cheese.
- Pour the ingredients into prepared baking pan and top with remaining cheese.
- Bake for 20 to 25 minutes or until cheese is melted and bubbly.
