Easy Chicken Stir Fry

Ingredients

  • 1 lb chicken breast cubed
  • Sea salt & cracked pepper to taste
  • 1 lb broccoli florets
  • 8 oz mushroom sliced
  • 3 tablespoons oil

FOR THE SAUCE

  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 tablespoon sesame oil
  • cup low sodium soy sauce
  • 2 tablespoons light brown sugar
  • 1 cup chicken broth
  • ¼ cup flour

Instructions

  • In a large pan on medium-high heat, add 1 tablespoon of oil. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and lightly browned. Remove cooked chicken and set aside.
  • In the same pan, heat 1 tablespoon of oil and add mushrooms. Cook till soft and then add broccoli florets. Continue to cook until broccoli is tender, approximately 4 minutes. Remove veggies from pan and set aside.
  • Add final tablespoon of oil to the pan and garlic and ginger. Cook until fragrant. Add the remaining ingredients for the sauce into the pan and stir until smooth (with a whisk is best).
  • Return chicken and vegetables back to the pan, and cook until heated through.
  • Serve over rice or noodles.

Notes

  1. You can add sliced red bell peppers, thinly sliced carrots, and water chestnuts! Add these once the mushrooms are cooked when you add broccoli.
  2. You can substitute 1/4 cup honey for the brown sugar.
  3. Want to spice things up? You can add 1/4 teaspoon red pepper flakes.
  4. Want to make it gluten-free? Make a cornstarch slurry of 1 tablespoon of cornstarch mixed with 1 tablespoon of water. Add towards the end of the cooking and cook until thickened. Then you can substitute amino acids for soy sauce.
