There's something about the colors of spring that just makes you want to celebrate with chocolate. Maybe it's the mix of bright greens and pinks and purples in the flowers, or the knowledge that warm weather is on its way. No matter what your reason, these fun, and colorful Spring Chocolate-Covered Oreos are a delicious way to join in the celebration.

Ingredients
CupsWhite Chocolate - melted
Small package of Oreo's
Spring mix Sprinkles
Additional White Chocolate to melt for decorating
Cookie molds
Carrot mold
Instructions
In a microwave safe bowl, or large measuring cup, melt enough White Chocolate to equal 2 cups of melted Chocolate. Using a round cookie mold (See link) fill the molds half full with the melted White Chocolate.
Press an Oreo into the mold, into the melted Chocolate, and cover the cookies with melted White Chocolate, filling the round molds.
Place the Molds in the refrigerator for one hour, to set the Chocolate.
When Chocolate is set, gently press the bottom of the molds to remove the Chocolate covered cookies.
Melt additional White Chocolate in the Microwave, and using a pastry brush, brush melted chocolate on top of cookies, and sprinkle the Sprinkle Mix onto the melted chocolate.
