Ingredients
1Tbspolive oil
1/4Cuponionchopped
1Tomatodiced
1Tsppaprika
1/2Tspgarlic powder
1/2Tspchili powder
Salt and pepper to taste
1/2Cupblack beans
1Egg
1/4Cupcheddar cheeseshredded
Instructions
Heat the olive oil in a skillet over medium heat. Add the onion and cook until translucent, around 5 minutes. Add the tomato, paprika, garlic powder, chili powder and salt and pepper. Cook for another 5 minutes or until the tomato is soft an has a sauce-like consistency.
Add the black beans and stir, cook for 4 more minutes and adjust seasonings to taste.
Add the egg and the cheddar cheese. Cover with a lid and cook for 4 minutes or until the egg is set.
Serve topped with chopped cilantro and chili flakes.
