I love finding easy side dish recipes. And I especially love it when those recipes call for very little prep and clean up, yet taste like you spent hours making them! That's why this Fiesta Corn Casserole recipe is one of my all-time favorites.

This cheesy casserole recipe is so darn good it gives other side dishes a bad name! Made with everyday ingredients, it's ready for the oven in just 10 minutes.

And while this recipe tastes great as is, you can always dress it up by adding a variety of bell peppers, green chiles, fresh poblano peppers, or even jalapeño peppers!

How to Make Fiesta Corn Casserole

Mexican Street Corn Casserole is quick and easy to make. This recipe makes enough for a crowd, so it's perfect for a party, a potluck, or even a barbecue. If making it for a smaller family, simply cut the recipe in half.

This colorful and festive Fiesta Corn Casserole recipe uses everyday kitchen staples to create a comforting casserole the whole family will enjoy. All you need is some frozen corn, a red bell pepper, some cream cheese, shredded cheddar, and a few basic spices.

Making this tasty Fiesta Corn Casserole is incredibly quick and easy. It takes about 10 minutes to prep, and then your oven does the rest. In about 35 minutes, you'll have a side dish full of cheesy goodness!

To get started, you simply combine all of the ingredients except the shredded cheese into a large skillet and cook over medium heat until the corn is cooked through and cream cheese is melted. You then stir in one cup of shredded cheese and pour the whole thing into a baking dish. Top with the remaining cheese, and bake until it's ready.

Can I Make this Mexican-inspired dish Recipe Lighter?

To make a lighter version of this recipe you could try using light cream cheese instead of regular, and perhaps cut down on the amount of shredded cheese used as well. However, I have never tried it, and it may impact the flavor of the dish. I'd love to know if you do try it though, and how it turns out! Leave me a comment below.

Can I Use Canned Corn Instead of Frozen?

I don't see any reason why you couldn't use canned corn as long as you use the same amount and drain it first. It may also alter the taste just a bit. I personally prefer the taste of frozen corn over canned corn, though. I bet using fresh corn would taste amazing!

Ingredients

  • 2 12 oz packs Frozen corn
  • 1 8 oz Cream cheese cubed
  • 2 cups Cheddar Jack Cheese (shredded) divided
  • 1 Red Bell Pepper diced
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 2 tbsps Butter

Instructions

  • Preheat the oven to 350 degrees and prepare a 2-quart casserole dish by greasing with nonstick cooking spray.
  • Add frozen corn, bell pepper, salt, pepper, paprika, butter, and cream cheese to a large skillet. Cook over medium heat until corn is cooked through and cream cheese is melted.
  • Remove skillet from heat and stir in 1 cup of shredded cheese.
  • Pour the ingredients into prepared baking pan and top with remaining cheese.
  • Bake for 20 to 25 minutes or until cheese is melted and bubbly.
